Curried Apple and Date Chutney

Makes: 3 cups (750 mL)
Ingredients

4 tbsp 60 mL Crisco® All-Vegetable Shortening

2 large tart green apples

15 pitted dates, coarsely chopped

1/4 cup 50 mL apple juice

1 cup 250 mL chicken broth

2 tsp 10 mL cider vinegar

2 tbsp 30 mL prepared Dijon mustard

1 to 2 tsp 5 to 10 mL curry powder or to taste

1 tsp 5 mL dried thyme (or 2 tsp (10 mL) chopped fresh thyme)
Preparation
- Melt shortening in a heavy skillet over medium heat. Add apples and dates; cook for about 10 minutes or until apples are almost tender. Add apple juice and chicken broth. Simmer for about 5 minutes or until sauce has thickened and apples are tender.
- Mix in vinegar, mustard, curry powder and thyme. Season with salt and pepper, as desired.
- Serve warm.
