Banana Nut Bread

Ingredients

2 1/2 cups 625 mL Robin Hood® Original All Purpose Flour

1 tsp 5 mL salt

1 tsp 5 mL baking soda

1/2 cup 125 mL Crisco® All-Vegetable Shortening

2 cups 500 mL sugar

2 cups 500 mL mashed ripe banana

3 large eggs, lightly beaten

1/2 cup 125 mL chopped walnuts or pecans

1 tsp 5 mL vanilla extract
Preparation
- Heat oven to 350ºF (180ºC). Grease and line with parchment paper two 8" x 4" (1.5 L) loaf pans.
- Combine flour, salt, and baking soda in a small bowl.
- Combine shortening, sugar, mashed banana, egg, nuts and vanilla. Beat using an electric mixer until well blended.
- Add the dry ingredients and stir just until moistened. Pour into prepared pan.
- Bake for 60 to 65 minutes, or until a toothpick inserted in the centre comes out clean. Remove from oven and let cool in pan for 10 minutes. Remove from pan and cool on wire rack.
