Makes: 4 servings
Description: Combine your favourite cooked rice with sliced green onions, chopped green pepper, almonds and parsley. Add a little rice vinegar vinaigrette and toss. This is a versatile and delicious side dish that you can make ahead...and it tastes delicious with just about anything!

1 1/2 cups (375 mL) cooked white, brown or wild rice, chilled
2 (2) green onions, thinly sliced
1/2 (1/2) green bell pepper, finely chopped
1/4 cup (50 mL) finely chopped almonds
2 tbsp (30 mL) fresh chopped parsley
1/3 cup (75 mL) CRISCO® Vegetable Oil
2 tbsp (30 mL) rice vinegar
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper


preparation direction
 

1. Combine rice, green onions, green pepper, almonds, and parsley in medium serving bowl.

2. Blend vegetable oil, rice vinegar, salt and pepper in small mixing bowl. Pour over rice mixture. Toss to coat. Cover and refrigerate at least 2 hours. Stir and add salt and pepper to taste before serving
