recipe image Roasted Chickpea and Tomato Salad

Prep Time: 10 minutes
Cooking Time: 30 minutes
Makes: 4 – 1 cup (250mL) servings
Freezing: Not recommended

Here's an easy-to-make salad or side dish. Mix together chickpeas, cherry tomatoes, chopped red onion and canola oil. Season, then roast. Toss with 1 tablespoon of lemon juice and serve.

Makes: 4 chicken breasts
