Prep Time: 20 minutes
Makes: 8-10 servings

For a delightfully fresh salad, toss together romaine, cucumber, tomatoes and herbs with crispy pita pieces, olives, feta cheese and a delicious red wine dressing. To shorten the preparation time, buy prepared packaged baked pita chips.

Prep Time: 5 minutes
Cooking Time: 10 minutes
Makes: 4 servings
Freezing: Not recommended

A marinade that includes ground cumin and cinnamon gives this chicken a delicious and slightly exotic flavour. And drizzled on top: a summer Salsa Verde that features Italian parsley, garlic, capers and lemon juice. Any leftover chicken will taste great on a sandwich.
